Welcome to Simpl Exchange – our new monthly pop-up series designed to spotlight Toronto’s rising culinary stars. Each month, we invite a talented local chef to take over and bring their signature dishes to our kitchen for one unforgettable night.


But here’s the exciting part – you get a say in what stays. Guests attending the pop-up will vote for their favorite dish, and the winning creation will earn a spot on our menu for the rest of the month. Chef Dennis Tay’s love for restaurants began at George Brown College. From there he travelled and worked in Italy, at the two Michelin starred La Tenda Rossa in Tuscany.


After staging in Edinborough, Scotland, and working in Halifax, Nova Scotia, Dennis returned to Toronto to be a part of great kitchens such as Splendido Restaurant, Keriwa Cafe, and Richmond Station.


Expect bold and bright Asian flavours from this former Top Chef Canada All Stars competitor as he draws inspiration from his Filipino heritage and frequent travels to South East Asia. Chef Dennis is now the Chef de Cuisine and a partner at Chef Nick Liu’s acclaimed DaiLo Restaurant.
