Evelyn Chick

Owner

Evelyn is a highly accredited specialist in the world of wine, spirits, bar & beverage. She is a serial entrepreneur, hospitality mentor and consultant, developing efficient, acclaimed and cutting edge bar programs for media outlets, multimillion dollar venues and notable brands. Under her hospitality company ‘Evelyn Chick Projects’ is Ahma, a dynamic event and incubator space, LOC Love of Cocktails, an experiential events company and SIMPL THINGS, an award winning cocktail and snack bar including Canada’s 50, and the ‘One to Watch’ on North America’s 50 Best Bars in 2024. Her cocktail book ‘For the Love of Cocktails’ is available across all major books stores in North America, and she’s excited to have launch her inaugural Sip & Snack Festival ‘Feastie’, championing local, BIPOC & female owned businesses. As a resident drink expert on the CTV’s ‘The Good Stuff’ and ‘The Social’, she is thrilled to be a catalyst in the rapid growth of Canada’s vibrant food and beverage culture.

Cody Wilkes

Executive Chef, Chef Cody

Cody Wilkes is the exeutive Chef at Simpl Things. He has been working professionally in hospitality for over twenty years. The last decade plus has been in senior management of various restaurants and restaurant groups. CDC Marben (2016) Sr Sous Chef Gusto Restaurant Group (2018) CDC Mattachioni (2021). He has been looking to find something as a perfect creative outlet and follow my dreams - opening Simpl Things with his famous fresh pasta and bread during the day as Chef Cody's Comfort Italian and night concept with his CDC Jason Lu - Lu's Variety. He loves ethically sourced food. Every ingredient sourced tries to be as local as possible, in respect to the makers and the planet. He is a die hard cook, very hands on in the kitchen, and loves spending time with his son, Nate.
